

🎄✨ Grain-Free Yule Cake Recipe | Holiday Dessert ✨🎄
Looking for a festive dessert that’s grain-free, naturally sweetened, and absolutely delicious?
In this video, I’ll show you step-by-step how to make a beautiful Grain-Free Yule Cake (Bûche de Noël) with almond flour sponge, berry sauce, and mascarpone cream. Perfect for the holidays, this cake is light, flavorful, and stunning to serve!

🥚 Ingredients – Grain-Free Sponge Cake
- 5 eggs
- 1 cup Greek yogurt
- 1/4 tsp pink salt
- 3 squirts stevia extract (see the video for more info)
- 1 tsp vanilla extract
- 1 tsp baking soda + 1 tsp cream of tartar (or 2 tsp baking powder)
- Peel of 1 orange
- 2 cups almond flour
- 1/2 cup arrowroot flour

Instructions:
Blend all ingredients. Spread evenly on a 17 x 12″ (43 x 30 cm) baking sheet.
Bake at 375°F (190°C) for 18 minutes.
Cool under a kitchen towel to prevent drying out.
Berry Sauce
- 2 cups of frozen berries (blueberries, raspberries, etc.)
- 1 squirt stevia extract + pinch of pink salt (or 2 tbsp sugar replacement)
Instructions:
Add all the ingredients to a pot. Melt the berries on low heat on a stove top. Cool, then blend carefully with a hand blender.
Simmer on low to thicken slightly.
Note:
You can replace the berry sauce with any jam. Just remember that it will change the calorie count of the final product.
Mascarpone Cream

- 4 oz mascarpone cheese
- 8 oz heavy whipping cream
- 1/4 cup powdered monk fruit sweetener (erythritol or allulose-based)
- 1 tsp vanilla extract
Instructions:
Whip all ingredients on high for 2 minutes until thick and fluffy.
Refrigerate until ready to use.
🎂 Assemble the Cake

- Cut off the top layer of the crust to expose the sponge.
- Spread berry sauce over the sponge.
- Spread mascarpone cream evenly, reserving some for decoration.
- Carefully roll into a log (you will cover cracks with cream or chocolate).
- Spread the remaining cream over the log.
- Optional: Melt chocolate with 1–2 tsp coconut oil or butter, spread quickly before solidifying. (If using chocolate, melt the chocolate in the microwave for 15 seconds at a time until it’s fully melted, or use a double boiler. For better texture, add one to 2 teaspoons of coconut oil or butter. )
- Decorate with fresh or freeze-dried berries and nuts.
