Grain-Free Zucchini Carrot Bread Ingredients:

- 1/2 cup low‑fat cottage cheese
- 5 eggs
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons apple cider vinegar
- 2 teaspoons pumpkin spice
- 3 squirts Stevia extract
- ➡️ Blend until smooth.
- ➡️ Now add:
- 2 cups almond flour
- 1/2 cup arrowroot flour
- ➡️ Blend again to combine.
- ➡️ Add:
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 2 cups shredded zucchini + carrot (about half of each)
- ➡️ Fold everything together with a spatula.
