Ingredients:

- 3 small, very ripe bananas
- ½ cup cottage cheese
- 5 eggs
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- A pinch of salt
- 1 teaspoon vanilla extract
- 3 squirts of stevia (optional)
- 2 cups almond flour
- ½ cup arrowroot flour
- 1 cup chopped walnuts (for topping)
- 2 tbsp allulose or monk fruit sweetener (for topping). Regular sugar works well, too, but it will change the nutritional value slightly.
Instructions:

- Add the bananas, cottage cheese, and eggs to a blender and blend until smooth. I use a hand blender.
- Add baking soda, cream of tartar, salt, and vanilla. Blend again.
- Add almond flour and arrowroot flour. Blend until the batter is fully combined.
- Pour the batter onto a 17 x 12-inch baking sheet lined with parchment paper and spread evenly.
- Sprinkle the top with chopped walnuts and allulose/monk fruit sweetener.
- Bake at 375°F for 20 minutes or until golden and set.
- Let cool slightly, slice, and enjoy.
