Simple Almond Flour Banana Bread |High‑Protein, Gluten‑Free, No Sugar!

Ingredients:

  • 3 small, very ripe bananas
  • ½ cup cottage cheese
  • 5 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 3 squirts of stevia (optional)
  • 2 cups almond flour
  • ½ cup arrowroot flour
  • 1 cup chopped walnuts (for topping)
  • 2 tbsp allulose or monk fruit sweetener (for topping). Regular sugar works well, too, but it will change the nutritional value slightly.

Instructions:

  1. Add the bananas, cottage cheese, and eggs to a blender and blend until smooth. I use a hand blender.
  2. Add baking soda, cream of tartar, salt, and vanilla. Blend again.
  3. Add almond flour and arrowroot flour. Blend until the batter is fully combined.
  4. Pour the batter onto a 17 x 12-inch baking sheet lined with parchment paper and spread evenly.
  5. Sprinkle the top with chopped walnuts and allulose/monk fruit sweetener.
  6. Bake at 375°F for 20 minutes or until golden and set.
  7. Let cool slightly, slice, and enjoy.
