  • 5 eggs
  • ½ cup cottage cheese
  • ¼ cup flaxseed meal
  • 1 teaspoon baking soda + 1 teaspoon of cream of tartar (or 2 tsp of baking powder)
  • 1–2 teaspoons soy sauce (optional)
  • ¼ teaspoon salt (use ½ teaspoon if skipping soy sauce)
  • 1 tablespoon cumin
  • 2 cups almond flour
  • 1 cup arrowroot flour
  • ¼ cup pumpkin seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon sesame seeds

Instructions:

  1. Blend eggs, cottage cheese, flaxseed meal, baking soda, cream of tartar, soy sauce (optional), salt, and cumin until smooth. A hand blender works best for this job.
  2. Now add almond flour and arrowroot flour. Blend again.
  3. Pour the batter onto a 17×12 in / 43×30 cm parchment‑lined baking tray and spread evenly.
  4. Sprinkle pumpkin seeds, chia seeds, and sesame seeds over the top.
  5. Bake at 375°F / 190°C for 20–22 minutes, or until a toothpick comes out clean.
  6. Slice into 24 pieces and store in the fridge in an airtight container or Ziploc bag.
